It is composed of two airy meringues welded together by a thick layer of whipped cream (plain, flavored or chocolate), all richly covered with whipped cream and surrounded by chocolate shavings or broken speculos or lace, sometimes topped with a candied cherry.

The meringue:

– 3 egg whites

– 150 g of sugar

Cream :

– 20 cl of fluid cream

– 100 g of dark chocolate

– 100 g of chocolate shavings for decoration


Preheat the oven to 100 ° C.

Whisk the egg whites, as soon as they foam add the sugar spoon after spoon then continue to whisk. The meringue should be very shiny and firm.

Using a smooth piping bag, form round meringues 5 cm in diameter.

Cook the meringues for 1 hour then leave them in the oven off overnight if you prepare them the day before otherwise until completely cooled.

Melt the dark chocolate in a double boiler or in the microwave.

Assemble the fluid cream in whipped cream and halfway add the chocolate little by little without stopping whipping the cream.

You will get a very firm whipped cream.

Let’s go to the assembly of the Merveilleux: Put whipped cream on the top of a meringue then place the points against points (if there is a beak, cut it delicately), the 2 flat sides will therefore form the body of the marvelous which you will brush completely with chocolate whipped cream.

Gently roll them in the chocolate shavings and then put them in the fridge until tasting.
