All you need is a homemade shortbread or other, spread it in any circle, put the fruit in the middle, fold the dough around the edges and presto! You get a rustic pie Simpler than that, there isn’t.

Pour the sifted flour, almond powder, sugar, vanilla sugar, salt and butter cut into small cubes in a bowl. Work with your fingertips so as not to overheat the butter and obtain a sandy mixture.

Add the egg yolk and mix everything without kneading too much and form a ball as soon as the dough is homogeneous. Wrap the mixture in cling film and let rest in the fridge for 30 minutes.

Peel the apple and dice it.

Pit the apricots and sliced them into 4.

Roll out the dough using a rolling pin on a floured work surface so that a sort of round patty of about 3 mm is obtained. thick.

Divide the apple and apricot pieces in the center of the dough, leaving a 3 cm border. Gather the sides of the batter over the fruit.

Bake for 30 minutes in an oven at 180 ° C.
